Natural wine is not a label, Inès says, it is a way of working: organic grapes, wild yeasts, and as little added to the wine as the grower dares.
At Fennel the list is short and it moves. When a grower sells out, the bottle leaves the board, and something else comes in. Ask for a taste before you choose; that is what the bar is for.
